"For Classico, I would suggest pairing both classic and modern dishes. Northern Italian classics such as Prosciutto Crudo with Melon and some aged Grana Podano with a few Olives and tinned Anchovy and you have a wonderful antipasto selection. For a more modern approach try a Vietnamese style Blue Swimmer Crab and Pomelo salad or a luxurious Lobster Roll with Cos & Saffron Mayo.
