Mocktail Punch

You'll need (serves 14-15):
  • 425g can of lychees
  • 225g jar of cocktail cherries
  • 15 raisins
  • 1 litre carton of cherry or cranberry juice (chilled)
  • 1 litre bottle of sparkling water (chilled)
  • 2 pairs of powder-free disposable gloves (for the frozen hands)

Method:
  • Rinse the disposable gloves and fill each with water. Tie a knot in the top of each (like a balloon) to hold the opening close, then freeze overnight.
  • Drain the lychees and cocktail cherries, reserving the juices in a jug.
  • Push a raisin into one end of each cherry, then push the cherries in the lychees to make some spooky 'eyeballs'.
  • Tip all juices (including reserved juices from the lychees and cherries) into a large bowl with the 'eyeballs'.
  • Carefully peel the gloves from the frozen hands, and add them to the punch.
  • Top up with sparkling water.

You'll need (serves 4):
  • 2 litres of cherry juice

  • Simple syrup (for a sweeter drink, optional)

Method:
  • Pour the cherry juice into a large saucepan, and add orange peels, chilli, cinnamon sticks, cloves and ginger.
  • Simmer for 5 minutes, then turn off the heat. If serving to children, take out the chilli after simmering or skip it altogether.
  • Leave to cool, then chill for a few hours or up to 2 days (the longer it's left, the more intense the flavours).
  • When ready to serve, pour the bunch into a pitcher.
  • Serve in champagne glasses (or see-through mason jars with straws if serving to children) to ensure the vivid red shines through.
